Apple Chutney Recipe

Apple chutney with granny smith apples, gala apples, cider vinegar, packed light brown sugar, large onion, chopped, hot red-pepper flakes, finely chopped peeled ginger, cloves, turkish bay leaves or 1 california, fresh lemon juice, golden raisins. To make this apple chutney for 3 persons you will need 15 min for preaparation and 1 1/4 hr for baking.

Ingredients

  • 2 Granny Smith apples
  • 2 Gala apples
  • 1 1/2 cups cider vinegar
  • 1 1/2 cups packed light brown sugar
  • 1 large onion, chopped
  • 1/2 tsp. hot red-pepper flakes
  • 2 tbsps. finely chopped peeled ginger
  • 2 cloves
  • 2 Turkish bay leaves or 1 California
  • 2 tbsps. fresh lemon juice
  • 1 cup golden raisins

For braised beef:

  • 5 pounds boneless beef chuck , cut into 2-inch pcs.
  • 3 tbsps. olive oil
  • 3 carrots, quartered
  • 3 celery ribs, quartered
  • 2 medium onions, quartered
  • 1 head garlic, halved crosswise
  • 3 tbsps. tomato paste
  • 1/3 cup balsamic vinegar
  • 1 bottle dry red wine
  • 2 Turkish bay leaves or 1 California
  • 2 thyme sprigs
  • 3 cups reduced-sodium beef broth
  • 3 cups water

For potatoes and carrots:

  • Accompaniment: crusty bread

To serve:

  • Special equipment: stand mixer with paddle attachment and dough hook, pasta machine or rolling pin, pizza stone or heavy baking sheet, food processor

  1. Step 1 Simmer apples with remaining ingredients and 1 teaspoon salt in a large heavy saucepan, stirring occasionally, until tender and juices have thickened, about 1 hour.

Apple chutney with , fresh lemon juice, large garlic cloves, fresh ginger, peeled, coarsely chopped, salt, dried crushed red pepper, golden raisins, yellow mustard seeds.

Ingredients

  • 1 1/2 pounds tart green apples , peeled, cored, chopped into 1/2-inch pcs.
  • 3 tbsps. fresh lemon juice
  • 10 large garlic cloves
  • 1 2-ounce pc. fresh ginger, peeled, coarsely chopped
  • 1 1/2 tsps. salt
  • 1 tsp. dried crushed red pepper
  • 1 1/2 cups golden raisins
  • 2 tbsps. yellow mustard seeds

For chicken

  • 1 cup chopped onion
  • 1 cup chopped peeled carrots
  • 4 cups cold water
  • 2 large fresh parsley sprigs
  • 1 fresh thyme sprig
  • 6 whole black peppercorns
  • 1 bay leaf

For jus

  • 1 large shallot, minced
  • 2 tsps. chopped fresh tarragon
  • 2 tablespoons chilled unsalted butter, cut into pcs.

For topping

  • *Be sure to use white rice flour; brown will result in gritty pizza dough.

Rice Fritters

  • 4 cups peeled jicama, cut into matchstick-size pcs.
  • 3 cups pea sprouts

Directions

  1. Step 1 Bring vinegar and sugar to boil in heavy large nonaluminum saucepan, stirring until sugar dissolves.
