Baked alaska peanut s’mores with graham cracker crumbs, 3/4 stick unsalted butter, melted, sugar, 1/2 pints premium chocolate ice cream, softened slightly, salted roasted peanuts, chopped, large egg whites.

  • 1 1/2 cups graham cracker crumbs
  • 3/4 stick unsalted butter, melted
  • 2 tablespoons plus 1/3 cup sugar
  • 1 1/2 pints premium chocolate ice cream, softened slightly
  • 1/2 cup salted roasted peanuts, chopped
  • 2 large egg whites

For meringue layers

  • 1 cup shelled natural almonds , toasted lightly and cooled
  • 1 1/4 cups sugar
  • 2 1/2 tsps. cornstarch
  • 5 large egg whites
  • 1/4 tsp. cream of tartar
  • 1/4 tsp. salt

For filling

  • 4 1/2 cups well-chilled heavy cream
  • 1/3 cup instant espresso powder
  • 6 tbsps. sugar
  • 2 tbsps. Kahlúa or other coffee-flavored liqueur

  • • cheese Use fresh ricotta cheese with a dry texture, preferably one with large curds. It’s sold at some supermarkets and at specialty foods stores and Italian markets.
  • • cherries If using fresh cherries, add enough purchased cherry juice to the drained juices to measure 1 1/2 cups total — the fresh cherries won’t release as much juice as frozen ones.

Directions

  1. Step 1 In a bowl stir together crumbs, butter, and 2 tablespoons sugar and reserve about one-fourth mixture.

  2. Step 2 Press remaining mixture onto bottom of flameproof 8-inch-square baking pan. Bake crust 12 minutes, or until golden, and cool in pan on a rack.
  3. Step 3 In a bowl stir together ice cream and peanuts and spread on crust. Sprinkle reserved crumb mixture evenly on top, pressing lightly.

  4. Step 4 In metal bowl combine egg whites and remaining 1/3 cup sugar and set over a pan of simmering water.

  5. Step 5 Stir mixture just until sugar is dissolved. Remove bowl from heat and with an electric mixer beat meringue until it holds stiff glossy peaks.

  6. Step 6 Spread meringue over ice cream and broil under preheated broiler about 4 inches from heat until golden, about 30 seconds.
