  • 1 2-to 2 1/4-pound whole red snapper, cleaned
  • 1 tbsp. minced garlic
  • 1 tbsp. fresh lemon juice
  • 3/4 tsp. seafood seasoning
  • 2 tablespoons chilled butter, cut into pcs.
  • 6 fresh thyme sprigs
  • 6 thin lemon slices

Chutney

  • 2 tbsps. butter
  • 1 ripe plantain, peeled, chopped
  • 2 cups chopped peeled fresh pineapple
  • 1/2 cup of dry white wine
  • 1/2 cup chicken stock or canned low-salt broth
  • 1/2 serrano chili, seeded, minced

Fish

For crispy corn biscuits:

  • 1 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1/4 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 4 tbsps. vegetable shortening
  • 1/2 cup cooked corn, well drained
  • 1/4 cup buttermilk

Directions

  1. Step 1 Place 24×18-inch piece of foil on heavy large baking sheet. Butter foil. Place fish in center of foil.

  4. Step 4 Preheat oven to 350°F. Bake fish until cooked through, about 45 minutes. Transfer fish to platter.
