Banana fritters with honey and ice cream with vegetable oil, honey, vanilla ice cream.

Ingredients

For dough

  • 1/2 cup whole almonds with skin , toasted
  • 1 1/3 cups all-purpose flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon
  • Pinch each of ground ginger, cardamom, cloves, white pepper, and freshly grated nutmeg
  • 3/4 stick unsalted butter, softened
  • 1/2 cup sugar
  • 1 large egg

For pumpkin filling

  • Accompaniment: red-wine caramel sauce
  • Special equipment: a 10- by 1-inch fluted round tart pan with removable bottom; pie weights or raw rice

For compote

  • Accompaniment: arrop syrup*
  • Garnish: confectioners sugar
  • Special equipment: an instant-read or candy thermometer; an ice cream maker; a 3-inch cookie cutter

Directions

  1. Step 1 Whisk 1 cup warm water, egg, and 2 tablespoons oil in large bowl to blend. Add yeast, then flour, whisking until smooth.

  2. Step 2 Cover and let stand at room temperature until batter has almost doubled in volume, about 2 hours. Stir in coconut, sesame seeds, and nutmeg.
  3. Step 3 Cut bananas on deep diagonal into eighteen 1/2-inch-thick slices. (Reserve any remaining bananas for another use.) Add banana slices to batter; stir gently to coat.
  4. Step 4 Pour vegetable oil into heavy medium saucepan to depth of 1 1/2 inches. Attach deep-fry thermometer and heat oil to 350°F.

  5. Step 5 Insert fork into 1 banana slice and transfer to oil. Repeat with 5 banana slices. Fry until crisp and golden on all sides, about 3 minutes.
