Basic tea punch with strong freshly brewed tea, any fruit juice, chilled ginger ale or club soda, sugar syrup to taste block of ice.


  • 2 cups strong freshly brewed tea

For pastry

  • 1 1/4 cups all-purpose flour
  • 3/4 stick cold unsalted butter, cut into 1/2-inch cubes
  • 2 tbsps. cold vegetable shortening
  • 1/4 tsp. salt
  • 3 to 4 tbsps. ice water

For filling

  • Special equipment: a pastry or bench scraper; a 9-inch glass or ceramic deep-dish pie plate; pie weights or raw rice

For cream:

Raspberry 2 12-ounce bags frozen unsweetened raspberries, thawed 1/2 cup sugar 1/4 cup raspberry jam

To Decorate

  • 8 yards colorfast silk ribbons
