Big breakfast burrito with canola oil, 1/2 small red onion, diced, red bell pepper, seeded and diced, canned black beans, preferably low-sodium, drained and rinsed, crushed red pepper flakes, salt and freshly ground black pepper to taste, large eggs, large egg whites, shredded pepper jack cheese, cooking spray, whole-wheat flour tortillas, reduced-fat sour cream, salsa, large tomato , seeded and diced, small avocado , pitted, peeled, and cubed, hot pepper sauce, to taste.

  • 1/2 small red onion, diced
  • 1 red bell pepper, seeded and diced
  • 1 cup canned black beans, preferably low-sodium, drained and rinsed
  • 1/4 tsp. crushed red pepper flakes
  • Salt and freshly ground black pepper to taste
  • 4 large eggs
  • 4 large egg whites
  • 1/3 cup shredded pepper Jack cheese
  • Cooking spray
  • 4 whole-wheat flour tortillas
  • 1/4 cup reduced-fat sour cream
  • 1/4 cup salsa
  • 1 large tomato , seeded and diced
  • 1 small avocado , pitted, peeled, and cubed
  • Hot pepper sauce, to taste

Salad:

  • 1 can GOYA® Blackeye Peas, drained and rinsed
  • 1 can GOYA® Chick Peas, drained and rinsed
  • 1 can GOYA® Red Kidney Beans, drained and rinsed
  • 1 medium cucumber, peeled, seeded and chopped
  • 1 red bell pepper, seeded and finely chopped
  • 2 tablespoon finely chopped fresh cilantro

  1. Step 1 Heat the oil in a large nonstick skillet over medium-high heat. Add the onion and red bell pepper and cook, stirring, until softened, about 5 minutes.
