Black soybean hummus with clove garlic, peeled, cooked black soybeans or 1 can organic black soybeans, drained, freshly squeezed lemon juice, soybean cooking or canning liquid or water, tahini, salt, ground cayenne pepper, sweet paprika and oil-cured olives, for garnish.

Ingredients

  • 1 clove garlic, peeled
  • 1 1/2 cups cooked black soybeans or 1 can organic black soybeans, drained
  • 2 to 4 tbsps. freshly squeezed lemon juice
  • 2 to 3 tbsps. soybean cooking or canning liquid or water
  • 1 1/2 tbsps. tahini
  • 1/2 to 3/4 tsp. salt
  • 1/2 to 1 teaspoon harissa  or 1/8 to 1/4 tsp. ground cayenne pepper
  • Sweet paprika and oil-cured olives, for garnish

Beans

  • 3 quarts cold water
  • 5 tbsps. olive oil
  • 4 whole garlic cloves, peeled
  • 1 large bunch fresh sage leaves
  • 16 whole black peppercorns
  • 1 tbsp. salt

Sauce

Cake

  • 8 large eggs, separated
  • 1 1/2 cups sugar
  • 1/2 tsp. coarse salt
  • 6 ripe bananas, peeled, thinly sliced
  • Fresh mint sprigs
  • Lemon twists
  • Additional banana slices

Spicy Sabayon Sauce

  • 4 large egg yolks
  • 3/4 cup dry white wine
  • 2 tbsps. sugar
  • 1/8 tsp. chile powder

  1. Step 1 Mince the garlic in a food processor. Add the black soybeans and the minimum amounts of the remaining ingredients.
