Blueberry Compote Recipe

Blueberry compote with water, sugar, strips fresh lemon zest, blueberries, fresh lemon juice. To make this blueberry compote for 1 persons you will need 5 min for preaparation and 15 min for baking.

Ingredients

Orange Sesame Dressing

Salad

  • 6 cups washed baby spinach
  • 1/4 cup daikon sprouts
  • 1/4 cup julienned carrot
  • 1/4 cup julienned jicama
  • 2 tbsps. mixture of black sesame seeds and white sesame seeds, for garnish

For toasted pumpkin seeds

  • Accompaniments: cubes of avocado tossed with lime juice; tomatillo salsa; lime wedges; chopped white onion; fresh cilantro sprigs

To grill and serve:

  • Olive oil
  • 2 heads radicchio, cut into eighths through core, with some core still attached to each pc.
  • 1/4 cup fresh flat-leaf parsley, coarsely chopped
  • 2 firm-ripe avocados, peeled and cut into wedges
  • 3 tbsps. fresh lemon juice
  • *Available at specialty foods shops. If unavailable, use 1 tbsp. finely grated orange zest. Do not substitute orange flower water.

For serving:

  1. Step 1 Boil water, sugar, and zest in a 1-quart heavy saucepan, uncovered, 5 minutes. Discard zest. Stir in blueberries and simmer, stirring occasionally, until blueberries begin to burst, 3 to 5 minutes.

Ingredients

Orange Oil:

  • 2 beetroot
  • 2 bulbs red whitlof leaves separated, washed and dried
  • 1 bunch frisee washed and dried
  • 1 bunch mache leaves
  • 2 blood oranges, peeled and sliced into rounds
  • 24 green asparagus spears, peeled and blanched
  • 2 tbsps. pine nuts, toasted

Walnut Vinaigrette:

For the garnish:

  • 1 cup fresh cilantro leaves, firmly packed
  • 3 scallions, trimmed and minced

Add and cook soup 30 seconds:

For serving:

  1. Step 1 Combine 1 1/2 cups blueberries, sugar and 1/3 cup water in heavy small saucepan. Simmer over medium heat until berries burst, stirring often, about 10 minutes.

    For this step you will need

  2. Step 2 Add remaining 1 cup berries. Cook until compote coats spoon, stirring often, about 8 minutes. (Can be made 3 days ahead.
