Breakfast patties with extra-virgin olive oil, brown rice or spelt flour, naturally brewed soy sauce, warm vegetable stock or plain soy milk, rolled oats, chopped yellow onion, dried sage, dried thyme, finely chopped raw nuts, cooked brown rice or other whole grain, minced shiitake or button mushrooms.

Ingredients

  • 2 tbsps. extra-virgin olive oil
  • 2 tbsps. brown rice or spelt flour
  • 1 tbsp. naturally brewed soy sauce
  • 1 1/2 cups warm vegetable stock or plain soy milk
  • 1 cup rolled oats
  • 1/2 cup chopped yellow onion
  • 1/2 tsp. dried sage
  • 1/2 tsp. dried thyme
  • 1 cup finely chopped raw nuts
  • 1 cup cooked brown rice or other whole grain
  • 1 cup minced shiitake or button mushrooms

  • Accompaniments: cubes of avocado tossed with lime juice; tomatillo salsa; lime wedges; chopped white onion; fresh cilantro sprigs

To grill and serve:

  • Olive oil
  • 2 heads radicchio, cut into eighths through core, with some core still attached to each pc.
  • 1/4 cup fresh flat-leaf parsley, coarsely chopped
  • 2 firm-ripe avocados, peeled and cut into wedges
  • 3 tbsps. fresh lemon juice
  • *Available at specialty foods shops. If unavailable, use 1 tbsp. finely grated orange zest. Do not substitute orange flower water.

  1. Step 1 1. Place a large skillet over medium-low heat. Add the oil, flour, and soy sauce. Whisk well to combine.

  2. Step 2 2. Whisk in vegetable stock or soy milk and cook until thickened, continuing to whisk, about 2 minutes.

  3. Step 3 3. Remove from heat and add the oats, onion, sage, thyme, nuts, rice, and mushrooms. Stir well to combine and transfer entire contents to a medium mixing bowl.

  4. Step 4 Allow to set at room temperature for 10 minutes, then refrigerate until cool enough to handle, about 20 minutes.
  5. Step 5 6. Remove the mixture from refrigerator, and scoop 1/4 cup of mixture into a patty. Place on the lined baking sheet, and continue to scoop mixture into patties until done.
