Ingredients

  • 2 skinless boneless chicken thighs, cut into 1-inch pcs.
  • 1 bunch scallions, cut into 1-inch pcs.
  • 2 bacon slices, cut into 1-inch pcs.
  • 1 1/2 tbsps. vegetable oil, divided
  • 1 large egg
  • 1/4 tsp. soy sauce
  • 1/8 tsp. Asian sesame oil
  • 1 1/2 cups chilled cooked white rice

The Chowder Soup Base

  • 4 oz. diced blanched salt pork or bacon
  • 1 Tbs butter
  • 3 cups sliced onions
  • 1 imported bay leaf
  • 3/4 cup crumbled “common” or pilot crackers, or 1 pressed-down cup fresh white bread crumbs
  • 6 cups liquid
  • 3 1/2 cups peeled and sliced or diced boiling potatoes
  • Salt and freshly ground white pepper

For shrimp:

  • 18 jumbo shrimp , peeled, leaving last shell segment and tail fan attached, then deveined
  • 2 tbsps. olive oil
  • 1/2 stick unsalted butter, melted
  • 1/4 cup hot sauce such as Frank‚Äôs RedHot
  • 1/2 bunch celery, cut into 4-inch sticks

Toppings:

  • 1 8-ounce bottle clam juice
  • 1 cup dry white wine
  • 1 12-ounce cod fillet, cut into 4 equal pcs.

For dipping sauce:

  • Special equipment: a 12-inch bamboo steamer; a 6-inch rolling pin or dowel; a well-seasoned 14-inch wok with a lid

Directions

  1. Step 1 Toss chicken, scallions, and bacon with 1/2 tablespoon vegetable oil and a scant 1/2 teaspoon each of salt and pepper in a 4-sided sheet pan.
