Brown rice, tomato and basil salad with champagne vinegar or white wine vinegar, sugar, olive oil, , fresh basil leaves, finely chopped.

For the soup:

  • 4 tomatoes, cored and coarsely chopped
  • 5 shiitake mushrooms, soaked in 1 cup hot water
  • About 5 tsps. fermented black beans, or to taste,
  • 8 cups water
  • 1 1/2 lb. fresh spinach, trimmed and rinsed
  • 2 heads butter lettuce, rinsed, leaves scissor cut in wide strips
  • Sea salt to taste

For the garnish:

  • 1 cup fresh cilantro leaves, firmly packed
  • 3 scallions, trimmed and minced

  1. Step 1 Bring 2 1/4 cups water to boil in heavy medium saucepan. Mix in rice and salt. Cover, reduce heat to low and simmer until rice is tender and water is absorbed, about 40 minutes.
