Chicken salad with couscous with regular or whole-wheat couscous, or quinoa, 1/2 tsp ground cumin, 1/2 tbsp chopped fresh parsley leaves, tbsp chopped walnuts, oz smoked boneless chicken breast, cut into 3/4-inch cubes, red seedless grapes, halved, green seedless grapes, halved, fresh pink grapefruit juice, tbsp fresh lemon juice, fresh lime juice, packed fresh basil leaves, cut into thin strips, 1/2 tsp curry powder, bunch arugula , coarse stems discarded.
