Coconut pudding with tropical fruits with diced peeled pineapple, sliced peeled banana, diced peeled seeded papaya, ground cinnamon.

  • 1/2 cup diced peeled pineapple
  • 1/2 cup sliced peeled banana
  • 1/2 cup diced peeled seeded papaya
  • Ground cinnamon

For Indian pudding

  • 2 1/2 cups low-fat milk
  • 1/3 cup cornmeal
  • 1/3 cup unsulfured molasses
  • 3/4 tsp. ground ginger
  • 1/4 tsp. cinnamon
  • 1 tbsp. unsalted butter

For dried-fruit compote

For sauce:

  • 1/2 cup fat-free chicken broth
  • 1/4 cup fresh lime juice
  • 2 tbsps. molasses
  • 1 tsp. cornstarch

Directions

  1. Step 1 Bring milk to simmer in heavy medium saucepan. Add coconut; remove from heat. Cover and let steep 20 minutes.

  2. Step 2 Whisk sugar, cornstarch and salt in small bowl to blend. Add to same saucepan. Gradually whisk in coconut mixture then egg.

  4. Step 4 Combine pineapple, banana and papaya in bowl. Divide half of fruit mixture among 4 wine glasses. Top with pudding then remaining fruit.
