  • 3/4 lb. ground lamb
  • 3 tbsps. chopped red onion
  • 1 1/2 tbsps. Major Grey’s mango chutney
  • 3 tbsps. chopped fresh coriander
  • 1/4 tsp. ground cumin
  • 1/4 tsp. ground coriander seeds
  • 1/8 tsp. paprika
  • 1 tbsp. vegetable oil

Minted yogurt

  • 2/3 cup Greek yogurt
  • 2 green onions, thinly sliced
  • 2 tbsps. chopped fresh mint

Make patties:

  1. Step 1 In a large bowl mix together all patty ingredients except oil until combined well and season with salt and pepper.

  2. Step 2 Form mixture into 4 patties about 1 inch thick. In a large heavy skillet oil over moderately high heat until hot but not smoking and cook patties until just cooked through, about 3 1/2 minutes on each side.
