Double chocolate-cherry brownies with unsalted butter, unsweetened chocolate, chopped, sugar, eggs, egg yolk, vanilla extract, almond extract, all purpose flour, ground cinnamon, halved dried sour or bing cherries or chopped pitted prunes, semisweet chocolate chips.

Ingredients

  • 3/4 cup unsalted butter
  • 6 oz. unsweetened chocolate, chopped
  • 2 1/2 cups sugar
  • 4 eggs
  • 1 egg yolk
  • 1 1/2 tsps. vanilla extract
  • 1/2 tsp. almond extract
  • 1 cup plus 2 tbsps. all purpose flour
  • 1 tsp. ground cinnamon
  • 1 cup halved dried sour or Bing cherries or chopped pitted prunes
  • 1 cup semisweet chocolate chips

Cake

  • 8 oz. semisweet chocolate, chopped
  • 1/2 cup unsalted butter, cut into 8 pieces, room temperature
  • 2/3 cup sugar
  • 3 eggs
  • 1/2 cup cake flour
  • 3/4 cup chopped walnuts

Glaze

  • 1/3 cup plum jam or apricot preserves
  • 1/2 cup chopped walnuts

For the pears

  • 1 firm-ripe Bosc pear
  • 1 tbsp. unsalted butter
  • 1 tbsp. sugar

For assembly

  • large pastry bag

  • Note: a cake decorating turntable is helpful for assembling a croquembouche

Directions

  1. Step 1 Preheat oven to 350°F. Butter and flour 13×8 1/2-inch glass baking dish. Melt butter and unsweetened chocolate in heavy large saucepan over low heat, stirring until smooth.
