Endive and asian pear salad with extra-virgin olive oil, vegetable oil, balsamic vinegar, large bunch watercress, thick stems trimmed, heads of belgian endive , sliced crosswise, ripe asian pear, halved, cored, thinly sliced.

  • 1 1/2 tbsps. extra-virgin olive oil
  • 1 1/2 tbsps. vegetable oil
  • 1 tbsp. balsamic vinegar
  • 1 large bunch watercress, thick stems trimmed
  • 2 heads of Belgian endive , sliced crosswise
  • 1 ripe Asian pear, halved, cored, thinly sliced

For the Bolognese sauce

  • 2 tbsps. peanut oil
  • 1 onion, peeled and diced
  • 1 carrot, peeled and diced
  • 1 stalk celery, peeled and diced
  • Kosher salt and freshly ground black pepper
  • 1 clove garlic, peeled and minced
  • 8 to 12 oz. mixed wild and cultivated mushrooms, cleaned, trimmed, and diced
  • 1 tbsp. fresh thyme leaves
  • 1 tomato, seeded and diced
  • 1 cup chicken

For the polenta

  • 1/2 cup mascarpone
  • 2 tbsps. finely grated Parmigiano-Reggiano

Directions

  1. Step 1 Combine walnuts, 1 tablespoon water, sugar, cayenne, and kosher salt in small nonstick skillet. Stir over medium heat until water evaporates and nuts are dry and golden, about 4 minutes.
