Fall fruit compote with apple juice, sugar, strips fresh lemon zest, cinnamon stick, halved, whole cloves, black peppercorns, cracked, unsalted butter, firm pears, peeled and each cut into 8 wedges with core removed, dried apricots, dried tart cherries, dried calimyrna figs, quartered, calvados, fresh lemon juice. To make this fall fruit compote for 8 persons you will need 10 min for preaparation and 1 hr for baking.

Ingredients

  • 2 cups apple juice
  • 1/2 cup sugar
  • 4 strips fresh lemon zest
  • 1 cinnamon stick, halved
  • 3 whole cloves
  • 10 black peppercorns, cracked
  • 1 tbsp. unsalted butter
  • 2 firm pears, peeled and each cut into 8 wedges with core removed
  • 1/2 cup dried apricots
  • 1/2 cup dried tart cherries
  • 4 dried Calimyrna figs, quartered
  • 2 tbsps. Calvados
  • 1 tbsp. fresh lemon juice

  • 3 tbsps. all-purpose flour
  • Finely grated zest of 1 lemon
  • Finely grated zest of 1 orange
  • 1/8 tsp. salt

Directions

  1. Step 1 Bring apple juice, sugar, zest, and spices to a boil in a 2-quart saucepan, stirring until sugar is dissolved, and simmer 5 minutes.
