Fettucine with porcini mushroom sauce with fettuccine, grated parmesan cheese.



  • 1 cup sugar
  • 3 1/2 tbsps. cornstarch
  • 2 tsps. grated lemon peel
  • 3/4 tsp. ground cinnamon
  • 3 lb. firm but ripe nectarines, halved, pitted, cut into 1/2-inch-thick wedges
  • 6 cups fresh blackberries
  • 1 tbsp. fresh lemon juice
  • 2 tablespoons unsalted butter, cut into small pcs.

  1. Step 1 Melt butter in heavy large skillet over medium-high heat. Add shallots and sauté until beginning to brown, about 4 minutes.
  2. Step 2 Add mushrooms and stir to coat. Add broth and cream and bring sauce to boil. Reduce heat to medium-low, cover and simmer until mushrooms are tender, about 20 minutes.

  3. Step 3 Uncover and boil until sauce thickens slightly, stirring occasionally, about 5 minutes. Season sauce with salt and pepper.

  4. Step 4 Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally.
  5. Step 5 Drain, reserving 1/2 cup cooking water. Return pasta to pot. Add sauce; toss over medium-low heat until heated through, adding reserved cooking water by tablespoonfuls if pasta is dry.
