Fragrant rice pudding with rice, single cream, milk (whole), unrefined golden caster sugar, cardamom pods, rose water, cinnamon, pistachio nuts. To make this fragrant rice pudding for 6 persons you will need 1 hour for preparation and for baking.


For the pudding

  • 75g Rice
  • 300ml Single cream
  • 600ml Milk (whole)
  • 75g Unrefined golden caster sugar
  • 4 Cardamom pods
  • 4tsp Rose water

  1. Step 1Place the rice and cream with almost all the milk in a pan over a low heat and simmer. Keep the pan uncovered for 30-40 minutes, occasionally stirring to prevent the rice from sticking to the pan. Continue until the rice is tender and the milk is almost absorbed.  You may need to add more milk if necessary.

  2. Step 2Stir in  the sugar, cardamon and rosewater and continue cooking until thick and creamy.  Pour into serving dishes and leave to cool and set.
