For pastry dough

  • 1 1/2 cups all-purpose flour
  • 1 1/4 sticks cold unsalted butter, cut into 1/2-inch cubes
  • 1/2 tsp. salt
  • 3 to 5 tbsps. ice water

For filling

  • Garnish: fresh dill sprigs
  • Special equipment: a pastry or bench scraper; 24 barquette molds; parchment paper; pie weights or raw rice

For salad

  • Special equipment: a muffin pan with 12 muffin cups

Salad topping

  • 8 cups loosely packed assorted mixed greens, including arugula and frisée
  • 2 tbsps. extra-virgin olive oil
  • 1/2 tsp. fine sea salt
  • 2 oz. Parmesan cheese, shaved with vegetable peeler
  • 6 large fresh basil leaves

For dipping sauce:

  • Special equipment: a 12-inch bamboo steamer; a 6-inch rolling pin or dowel; a well-seasoned 14-inch wok with a lid

Directions

  1. Step 1 Stir together parmesan and flour with a fork. Heat an 8- to 10-inch nonstick skillet over moderately low heat until hot.

  2. Step 2 Sprinkle 2 teaspoons parmesan mixture into a 2 1/2-inch free-form round in skillet and cook until cheese is set, about 10 seconds.
  3. Step 3 Loosen edge of frico with plastic spatula, then turn over and cook 5 seconds more. Immediately transfer frico to a muffin cup, lightly pressing it in, and remove from cup once crisp, about 30 seconds.
