Ginger Cake Recipe

  • 8 large egg whites

Stir sugar and water 1 minute (mixture will bubble vigorously), then stir in:

  • 2 1/2 tbsps. dark rum
  • 1 tsp. vanilla extract

Directions

  1. Step 1 Beat together butter and brown sugar in a large bowl with an electric mixer at high speed until pale and fluffy, about 5 minutes.

  2. Step 2 Whisk together molasses and boiling water in another large (at least 2-quart) bowl, then whisk in baking soda (mixture will bubble up and expand).

For gravlaks

  • 1 center-cut pc. arctic char fillet with skin, pin bones removed
  • 1/2 cup sugar
  • 1/4 cup kosher salt
  • 1 tbsp. coarsely ground black pepper
  • 3 cups coarsely chopped fresh dill

For cucumber jelly

  • Accompaniment: thin Scandinavian crispbread such as Kavli

For the sauce:

Spicy Sabayon Sauce

  • 4 large egg yolks
  • 3/4 cup dry white wine
  • 2 tbsps. sugar
  • 1/8 tsp. chile powder

For Serving

  1. Step 1 Beat butter and salt in a large bowl with an electric mixer until creamy. Add brown sugar, a little at a time, and beat until pale and fluffy.

    For this step you will need

  2. Step 2 Add yolks, 1 at a time, beating well after each addition. Beat in reserved ginger syrup, then beat in chopped ginger mixture.
  3. Step 3 Beat whites and a pinch of salt in another bowl with cleaned beaters until they just hold stiff peaks.

  4. Step 4 Fold one fourth of whites into batter gently but thoroughly, then sift one fourth of remaining cup flour into batter and fold gently but thoroughly.
  5. Step 5 Spoon batter into loaf pan, spreading evenly. Bake until a wooden pick or skewer inserted in center of cake comes out clean, 1 1/4 to 1 1/2 hours.

To make this ginger cake for 1 persons you will need 20 mins for preparation and 50 mins for baking.

Ingredients

For the cake

  • 125g Unrefined golden caster sugar
  • 125g Butter (unsalted)
  • 225ml Black treacle
  • 300g Plain white flour
  • 2tsp Baking powder
  • 1tsp Cinnamon
  • 1tsp Ginger (ground)
  • 1 Egg(s) (free range)
  • 75g Stem ginger

For the topping

  • Apricot jam
  • Stem ginger

Directions

  1. Step 1Preheat the oven to 180°C (fan 160°C, gas mark 4). Grease and line a loaf tin with baking paper.
  2. Step 2In a saucepan, heat the butter, sugar and black treacle until melted.
