Goan red spice paste with largish, mild, fresh red chiles, deseeded, tsp cumin seeds, 1/2 tsp coriander seeds, cloves, black peppercorns, 3/4 tsp ground turmeric, large cloves of garlic, peeled, 1/2-inch slice of fresh ginger, peeled, of cinnamon, tsp tamarind paste, 3/4 tsp sugar, 3/4 tsp salt, white wine vinegar.

Ingredients

  • 2 largish, mild, fresh red chiles, deseeded
  • 1 tsp cumin seeds
  • 1 1/2 tsp coriander seeds
  • 3 cloves
  • 6 black peppercorns
  • 3/4 tsp ground turmeric
  • 9 large cloves of garlic, peeled
  • 1/2-inch slice of fresh ginger, peeled
  • 1 1/2-inch pc. of cinnamon
  • 1 tsp tamarind paste
  • 3/4 tsp sugar
  • 3/4 tsp salt
  • 1/3 cup white wine vinegar

Tandoori masala:

  • 2 1/2 tbsps. coriander seeds
  • 2 tbsps. cumin seeds
  • 1 tbsp. plus 1 teapsoon whole black peppercorns
  • 1 tbsp. ground cardamom
  • 2 tsps. chili powder
  • 1 tsp. dried fenugreek
  • 1 tsp. whole cloves
  • 1 3″–4″ cinnamon stick, broken into pcs.
  • 1/4 tsp. ajwain seeds

Garam masala:

  • 24 bay leaves, crumbled
  • 3 tbsps. black cardamom pods
  • 2 1/2 tbsps. cumin seeds
  • 2 tbsps. black peppercorns
  • 1 1/2 tbsps. green cardamom pods
  • 1 tbsp. coriander seeds
  • 2 tsps. ajwain seeds
  • 2 tsps. whole cloves
  • 1 3″–4″ cinnamon stick, broken into pcs.

Turkey:

  • 1 12–14-pound turkey
  • 1/4 cup kosher salt
  • 5 black cardamom pods
  • 5 green cardamom pods
  • 1 tbsp. cumin seeds
  • 1 medium red onion, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves

  • Special equipment: A turkey roasting bag

  1. Step 1 Blend all the ingredients together to make a fine paste. Store in a sterilized jar in the fridge for 1 week.
