Grilled rib-eye steaks with cucumber relish with two 1-inch-thick rib-eye steaks at room temperature, freshly ground black pepper.

For the simple syrup:

  • 2 small fennel bulbs , stalks trimmed flush with bulb
  • olive oil for brushing fennel
  • 1/2 lemon

Malted milk ball:

  • 1/2 cup chopped malted milk balls
  • 2 tbsps. chocolate malted powder

  • 1/2 cup coarsely chopped semisweet chocolate

Peppermint fudge:

  • 3 tbsps. fudge sauce
  • 1/4 cup crushed peppermint candies

Directions

Make relish:

  1. Step 1 Season steaks with salt and generously with pepper. Grill steaks on an oiled rack set 5 to 6 inches over glowing coals 4 to 5 minutes on each side for medium-rare meat.
