  • 2 tbsps. chopped fresh rosemary
  • 1 tbsp. chopped fresh tarragon
  • 2 garlic cloves, minced
  • 2 tsps. salt
  • 1 1/2 tsps. ground black pepper
  • 2 1 1/2-pound flank steaks
  • 1 tbsp. olive oil

For the pork:

  • 2 pork tenderloins, about 1 1/2 lb. each
  • 2 tbsps. mild vegetable oil, such as canola
  • Salt and freshly ground black pepper

Spicy Sabayon Sauce

  • 4 large egg yolks
  • 3/4 cup dry white wine
  • 2 tbsps. sugar
  • 1/8 tsp. chile powder

Directions

  1. Step 1 Preheat broiler. Brush fish with 2 tablespoons oil. Sprinkle with salt and pepper. Broil until just opaque in center, about 5 minutes per side.
