Iced cucumber soup with mint, watercress, and feta cheese with persian or japanese cucumbers, peeled, halved, seeded, cut crosswise into 1-inch-thick slices, low-salt chicken broth or vegetable broth, finely crumbled feta cheese, chopped white onion, loosely packed fresh mint leaves, loosely packed watercress leaves, fresh oregano leaves, small garlic clove, peeled, salt, 17.6-ounce container whole-milk or nonfat yogurt, hard-boiled eggs, chilled, coarsely chopped, chopped fresh chives.

  • 1 lb. Persian or Japanese cucumbers, peeled, halved, seeded, cut crosswise into 1-inch-thick slices
  • 2 cups low-salt chicken broth or vegetable broth
  • 4 oz. finely crumbled feta cheese
  • 3/4 cup chopped white onion
  • 1/2 cup loosely packed fresh mint leaves
  • 1/2 cup loosely packed watercress leaves
  • 1 tbsp. fresh oregano leaves
  • 1 small garlic clove, peeled
  • 1 tsp. salt
  • 1 17.6-ounce container whole-milk or nonfat yogurt
  • 2 hard boiled eggs
  • 3 tbsps. chopped fresh chives

For grilled mushrooms and chicken:

  • 3/4 lb. fresh cremini mushrooms, halved
  • 3/4 lb. fresh shiitake mushrooms, stems reserved for another use and caps halved
  • 2 lb. skinless boneless chicken thighs
  • 1/3 cup basil pesto

Fresh tomato salad:

  • 2 medium tomatoes, cut into 1/2-inch-thick wedges
  • 1/4 cup thinly sliced basil

For lettuce:

  • Equipment: a perforated grill sheet

Directions

  1. Step 1 Puree cucumbers, broth, feta, onion, mint, watercress, oregano, garlic, and salt in blender until smooth.
