Indian-spiced rice with lentils with dried lentils, basmati rice*, vegetable oil, of cinnamon stick, whole cloves, cumin seeds, garlic cloves, finely chopped, chopped fresh ginger, water, salt, sugar, turmeric, chopped fresh cilantro, fresh lime juice.

Ingredients

  • 1 cup dried lentils
  • 1 cup basmati rice*
  • 2 tsps. vegetable oil
  • 2 1-inch pcs. of cinnamon stick
  • 2 whole cloves
  • 1 tsp. cumin seeds
  • 3 garlic cloves, finely chopped
  • 2 tsps. chopped fresh ginger
  • 4 1/3 cups water
  • 2 tsps. salt
  • 1 tsp. sugar
  • 1/4 tsp. turmeric
  • 1/4 cup chopped fresh cilantro
  • 2 tbsps. fresh lime juice

For the Bavarian Cream

  • 1 1/2 cups heavy cream
  • 3 envelopes unflavored gelatin
  • 6 egg yolks
  • 1 cup plus 2 tbsps. confectioners’ sugar
  • 2 cups milk
  • Seeds from 2 vanilla beans, or 2 tbsps. pure vanilla paste

  • *Be sure to use white rice flour; brown will result in gritty pizza dough.

Rice Fritters

  • 4 cups peeled jicama, cut into matchstick-size pcs.
  • 3 cups pea sprouts

Directions

  1. Step 1 Rinse lentils; drain. Place in small bowl. Rinse rice; drain. Place in another small bowl. Heat oil in heavy large saucepan over medium-high heat.

  2. Step 2 Add cinnamon, cloves, and cumin; sauté about 2 minutes. Add garlic and ginger; sauté about 30 seconds.

  3. Step 3 Add water, salt, sugar, and turmeric; bring to boil. Reduce heat; add lentils and cook 8 minutes. Increase heat to high.

  4. Step 4 Add rice and boil 5 minutes. Reduce heat; cover and simmer until lentils and rice are tender and liquid is absorbed, about 8 minutes longer.

  5. Step 5 Remove from heat; let stand covered 5 minutes. Transfer rice to large bowl. Remove cinnamon stick pieces and cloves.
