  • 1 pc. center-cut beef tenderloin
  • 2 tsps. jerk seasoning paste
  • 1 tbsp. vegetable oil
  • 3 tbsps. cocktail onions, rinsed
  • 1/3 cup packed cilantro leaves
  • 24 store-bought plantain chips

  • Special equipment: stand mixer with paddle attachment and dough hook, pasta machine or rolling pin, pizza stone or heavy baking sheet, food processor



  1. Step 1 Quarter beef lengthwise and pat dry. Season with 1/4 teaspoon salt and rub jerk paste all over beef.
