Lentil and rice salad with water, extra-virgin olive oil, salt, long-grain rice, dried lentils, picked over, scallions, chopped, chopped fresh flat-leaf parsley, chopped fresh dill, 1/2 english cucumber, seeded and diced, fresh lemon juice, yellow pear or cherry tomatoes, halved.

Ingredients

  • 1 1/2 cups water
  • 3 tbsps. extra-virgin olive oil
  • 1/2 tsp. salt
  • 1 cup long-grain rice
  • 1/4 cup dried lentils, picked over
  • 4 scallions, chopped
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1/4 cup chopped fresh dill
  • 1/2 English cucumber, seeded and diced
  • 2 tbsps. fresh lemon juice
  • 1 cup yellow pear or cherry tomatoes, halved

For the soup:

  • 4 tomatoes, cored and coarsely chopped
  • 5 shiitake mushrooms, soaked in 1 cup hot water
  • About 5 tsps. fermented black beans, or to taste,
  • 8 cups water
  • 1 1/2 lb. fresh spinach, trimmed and rinsed
  • 2 heads butter lettuce, rinsed, leaves scissor cut in wide strips
  • Sea salt to taste

For the garnish:

  • 1 cup fresh cilantro leaves, firmly packed
  • 3 scallions, trimmed and minced

Directions

  1. Step 1 Bring water, 1 tablespoon oil, and salt to a boil in a 2-quart saucepan, then stir in rice. Return to a boil and cover pan.

  2. Step 2 Reduce heat to low and simmer rice until water is absorbed and rice is tender, about 15 minutes. Fluff rice with a fork and let stand, covered, 5 minutes.

  4. Step 4 Spread rice and lentils in a shallow baking pan and cool 10 minutes. Transfer to a bowl and toss gently with remaining 2 tablespoons oil, remaining ingredients, and salt and pepper to taste.
