Lime-crab soup with limes, zested and juiced, fresh corn, cut from about 6 cobs, adobo sauce, reduced-sodium nonfat chicken broth, salt, divided, cooked crabmeat, avocado, pitted and diced, packed chopped fresh cilantro, crushed cumin seeds, tortilla chips or strips.

  • 4 limes, zested and juiced
  • 3 cups fresh corn, cut from about 6 cobs
  • 1/2 chipotle chile in adobo sauce, seeded, plus 1 tbsp. adobo sauce
  • 4 cups reduced-sodium nonfat chicken broth
  • 1/2 tsp. salt, divided
  • 1/2 lb. cooked crabmeat
  • 1 avocado, pitted and diced
  • 1/4 cup packed chopped fresh cilantro
  • 1/2 tsp. crushed cumin seeds
  • 4 oz. tortilla chips or strips

For tomato vinaigrette:

For salad:

  • 8 large portabella mushrooms, stems reserved for another use
  • 1 small red onion, cut lengthwise into 1/2-inch-thick wedges
  • 2 medium yellow bell peppers, quartered lengthwise
  • 1 medium zucchini, halved lengthwise
  • 1 1/2 tbsps. extra-virgin olive oil
  • 1 1/2 cups boiling-hot water
  • 1 cup medium bulgur
  • 1/4 cup pine nuts, toasted
  • 2 1/2 oz. baby arugula
  • 1 firm-ripe small avocado

For chickpea salad:

  • 1 can chickpeas, rinsed and drained
  • 1/4 cup finely chopped red onion
  • 1 tbsp. chopped mint

For green bean salad

  • 1 lb. haricorts verts or other green beans
  • 1/2 cup whole almonds with skin, toasted and coarsely chopped

For grilled mushrooms and chicken:

  • 3/4 lb. fresh cremini mushrooms, halved
  • 3/4 lb. fresh shiitake mushrooms, stems reserved for another use and caps halved
  • 2 lb. skinless boneless chicken thighs
  • 1/3 cup basil pesto

Fresh tomato salad:

  • 2 medium tomatoes, cut into 1/2-inch-thick wedges
  • 1/4 cup thinly sliced basil

For lettuce:

  • Equipment: a perforated grill sheet
