Litchi five-spice ice cream with sugar, cornstarch, large eggs, five-spice powder, milk, drained chilled whole pitted litchis in syrup, chilled heavy cream.

  • 1 tbsp. cornstarch
  • 3 large eggs
  • slightly rounded 1/4 tsp. five-spice powder
  • 2 1/2 cups milk
  • 1 3/4 cups drained chilled whole pitted litchis in syrup
  • 1 1/2 cups chilled heavy cream

  • 2 1/2 lb. fresh cherries, pitted, drained, juices reserved, or two packages frozen dark sweet pitted cherries , thawed, drained, juices reserved
  • 1 cup sugar
  • 2 tbsps. fresh lemon juice
  • 2 tbsps. maraschino liqueur or Cointreau
  • 4 tbsps. unsalted butter
  • Powdered sugar

  • • cheese Use fresh ricotta cheese with a dry texture, preferably one with large curds. It’s sold at some supermarkets and at specialty foods stores and Italian markets.
  • • cherries If using fresh cherries, add enough purchased cherry juice to the drained juices to measure 1 1/2 cups total — the fresh cherries won’t release as much juice as frozen ones.

Directions

  1. Step 1 In a heatproof bowl whisk together sugar, cornstarch, eggs, five-spice powder, and a pinch salt until combined well.

  2. Step 2 In a heavy saucepan heat milk just to a boil and add in a slow stream to egg mixture, whisking. Transfer custard to pan and bring to a boil over moderate heat, whisking constantly.

  3. Step 3 Boil custard gently, whisking, 1 minute. Remove pan from heat and cool custard, stirring occasionally.
  4. Step 4 In a blender purée litchis with 1/2 cup cream and stir into custard with remaining cup cream. Freeze custard in an ice-cream maker.
