Maple oatmeal muffins with unbleached all purpose flour, quick-cooking oats, baking powder, ground cinnamon, baking soda, salt, low-fat buttermilk, unsweetened applesauce, pure maple syrup, packed golden brown sugar, vegetable oil, large egg, vanilla extract.


For dressing

  • 1 bunch arugula, washed well and spun dry
  • 1 small bunch frisée , washed and spun dry
  • 1 small head Boston lettuce, washed and spun dry


For sauce:

  • 1/2 cup fat-free chicken broth
  • 1/4 cup fresh lime juice
  • 2 tbsps. molasses
  • 1 tsp. cornstarch


  1. Step 1 Preheat oven to 400°F. Line twelve 1/3-cup muffin cups with paper liners. Combine first 6 ingredients in large bowl and stir to blend.
  2. Step 2 Whisk buttermilk, applesauce, maple syrup, brown sugar, vegetable oil, egg and vanilla in medium bowl until well blended.
