Maple Oatmeal Muffins Recipe

Maple oatmeal muffins with unbleached all purpose flour, quick-cooking oats, baking powder, ground cinnamon, baking soda, salt, low-fat buttermilk, unsweetened applesauce, pure maple syrup, packed golden brown sugar, vegetable oil, large egg, vanilla extract.
Ingredients
- 2 cups unbleached all purpose flour
- 1 cup quick-cooking oats
- 2 tsps. baking powder
- 2 tsps. ground cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup low-fat buttermilk
- 3/4 cup unsweetened applesauce
- 1/2 cup pure maple syrup
- 1/2 cup packed golden brown sugar
- 1/4 cup vegetable oil
- 1 large egg
- 2 tsps. vanilla extract
For dressing
- 1 bunch arugula, washed well and spun dry
- 1 small bunch frisée , washed and spun dry
- 1 small head Boston lettuce, washed and spun dry
Filling
For sauce:
- 1/2 cup fat-free chicken broth
- 1/4 cup fresh lime juice
- 2 tbsps. molasses
- 1 tsp. cornstarch
Directions
- Step 1 Preheat oven to 400°F. Line twelve 1/3-cup muffin cups with paper liners. Combine first 6 ingredients in large bowl and stir to blend.
- Step 2 Whisk buttermilk, applesauce, maple syrup, brown sugar, vegetable oil, egg and vanilla in medium bowl until well blended.

- Step 3 Divide batter equally among muffin cups (batter will reach top of cups). Bake until muffin tops are golden brown and tester inserted into center of muffins comes out clean, about 28 minutes.
