Mincemeat ice cream with golden delicious apples , peeled, cored, cut into 3/4-inch cubes, raisins, pecans, toasted, chopped, sugar, apple cider, calvados, unsalted butter, fresh lemon juice, cinnamon stick, salt, ground nutmeg, ground cloves, finely grated lemon peel.


Vanilla Ice Cream



Whipped cream frosting:

Increase heat to medium-high and add:

Stir sugar and water 1 minute (mixture will bubble vigorously), then stir in:

  • 2 1/2 tbsps. dark rum
  • 1 tsp. vanilla extract


For ice cream:

  1. Step 1 Mix cream and milk in heavy large saucepan. Scrape in seeds from vanilla bean; add bean. Bring to simmer; remove from heat.

  2. Step 2 Whisk yolks and sugar in large bowl to blend. Gradually whisk hot cream mixture into yolk mixture. Return mixture to saucepan.

  3. Step 3 Stir over medium heat until mixture thickens and leaves path on back of spoon when finger is drawn across, about 5 minutes.

For mincemeat:

  1. Step 4 Bring all ingredients to boil in heavy large saucepan. Reduce heat to medium and cook until almost all liquid is absorbed, stirring frequently, about 15 minutes.
  2. Step 5 Process custard in ice cream maker. Transfer ice cream to bowl. Fold in 3 cups cold mincemeat. Cover and freeze until firm, about 4 hours.
