Mini cheese and tomato pizza with strong white bread flour, salt, easy bake yeast, unrefined golden caster sugar, warm water, tomato purée, tomato(es), cheddar cheese. To make this mini cheese and tomato pizza for 20 persons you will need 1 hour for preparation and 8 mins for baking.


For the dough

  • 500g Strong white bread flour
  • ½tsp Salt
  • 7g Easy bake yeast
  • 2tsp Unrefined golden caster sugar
  • 325ml Warm water

For the topping


  1. Step 1Put the flour, yeast and salt into a bowl and mix together, then make a well in the centre.

  2. Step 2Stir the sugar into the warm water then pour into the well in the dry ingredients.

  3. Step 3Working from the edge mix all the dry ingredients into the water. When the mix has come together turn out onto a lightly floured surface and knead for 10 minutes. The dough should be soft and spring back to the touch.
  4. Step 4Flour the dough and cover with cling film, then leave to rest for about 15 minutes.
  5. Step 5Carefully roll out the dough until it is about 1cm thick, then use a 6cm round cutter to cut out discs of dough, depending on how many pizzas you want to make. Then cover and leave to rest for about 10 minutes.
  6. Step 6Preheat the oven to 200°C (180°C fan, gas mark 6). For the topping; spread the tomato purée over the pizza, then sprinkle on the diced tomato and grated cheese.
