Mujadara with olive oil, or 5 large onions, halved and thinly sliced, salt and pepper, brown or green lentils, sorted and rinsed, long-grain white rice, plain yogurt or sour cream, optional, for serving.


Walnut Filling

  • 1 cup walnuts, chopped coarsely
  • 5 Tbsp sugar
  • Zest of 1 orange
  • 2 tsp cinnamon
  • 2 Tbsp orange blossom water

Cheese Filling

  • 2 1/2 cups flour
  • Pinch of salt
  • 1 Tbsp sugar
  • 1 tsp instant dry yeast
  • 3 cups lukewarm water
  • 1 tsp baking soda
  • 2 cups of rose syrup
  • peanut oil, for deep-frying
  • 1/2 cup ground pistachios, to garnish

For pesto-pickled shallot vinaigrette

  • 2 medium Yukon Gold potatoes, peeled and cut into quarters
  • 1 tbsp. unsalted butter
  • 1/2 medium onion, finely chopped
  • 2 cups finely grated Parmigiano-Reggiano
  • 1 tbsp. kosher salt
  • 1/2 tsp. nutmeg, freshly grated
  • 1 tbsp. olive oil

To serve

  • 2 large heads romaine , torn into bite-sized pcs.
  • 16 thin slices prosciutto


  1. Step 1 1. Heat the olive oil in a very large nonstick skillet over low heat (if you only have smaller skillets, divide the oil and onions between two).

  3. Step 3 2. Meanwhile, bring 4 1/2 cups water to a boil in a large saucepan or small stockpot and add the lentils.

  4. Step 4 Simmer, uncovered, for 20 minutes, then add the rice and half the cooked onions. Season with salt and pepper to taste.

  5. Step 5 Simmer, covered, over very low heat until the lentils and rice are tender, about 20 minutes more. You may need to add more water toward the end; check after 15 minutes.
