Nectarine relish with coriander seeds, cumin seeds, fennel seeds, nectarine(s), red onion, rosemary, unrefined golden granulated sugar, white wine vinegar. To make this nectarine relish for 1 persons you will need 15 mins for preparation and 25 mins for baking.


  • 1tsp Coriander seeds
  • 1tsp Cumin seeds
  • ½tsp Fennel seeds
  • 8 Nectarine(s)
  • 2 Red onion
  • ½tbsp Rosemary
  • 5tbsp Unrefined golden granulated sugar
  • 4tbsp White wine vinegar


  1. Step 1Place the coriander, cumin and fennel seeds in a pestle and mortar and grind to a quite a fine powder.

  2. Step 2Add to a non stick saucepan with the remaining ingredients and 200ml (7 fl oz) water. Slowly bring to the boil, allowing the sugar to dissolve and boil for 20-25 minutes, stirring occasionally until most of the liquid has evaporated and the relish has thickened

  3. Step 3Allow to cool and serve with a strong cheddar cheese, hams or pates. The relish can be stored in an airtight container in the refrigerator for 2 weeks.
