Nori or lettuce leaf wrap-ups with whole nori sheets or large lettuce leaves, guacamole, grated carrot, 1/2 cucumber, cut in half horizontally, seeded, and sliced into 1/4-inch slices, sprouts, cooked chicken breast, cooled and shredded, or 1 cooked salmon fillet, cooled and flaked, or 1 package firm tofu, cut in 1-inch strips, sautéed, and cooled.

  • 8 whole nori sheets or large lettuce leaves
  • 1 cup guacamole
  • 1 cup grated carrot
  • 1/2 cucumber, cut in half horizontally, seeded, and sliced into 1/4-inch slices
  • 1 cup sprouts
  • 1 cooked chicken breast, cooled and shredded, or 1 cooked salmon fillet, cooled and flaked, or 1 package firm tofu, cut in 1-inch strips, sautéed, and cooled

Cake:

  • 1 1/4 cups egg whites , at room temperature
  • 1/4 tsp. salt
  • 1 tsp. cream of tartar
  • 1 cup superfine sugar
  • 2 tsps. pure vanilla extract
  • 2 tsps. fresh lemon juice
  • 1 cup sifted cake flour
  • 1/3 cup dry unsweetened shredded coconut
  • 1/3 cup fresh coconut shavings

Sauce:

Chive potato hash

  • 2 tbsps. canola oil
  • 1 small russet potato, peeled and cut into 1/4-inch dice
  • 1/2 small sweet potato, peeled and cut into 1/4-inch dice
  • 1/8 tsp. kosher salt
  • Scant 1/8 tsp. freshly ground black pepper
  • 1 tbsp. fresh chives, chopped

Scallops

  • *If chervil is unavailable, fresh flat-leaf parsley leaves may be substituted. Extra chervil oil will keep, covered, at room temperature 3 days. Try it in salad dressings or drizzled over fish, chicken breasts, or steamed vegetables.

  1. Step 1 1. Place one nori sheet, shiny side down, on a clean, dry surface. If using lettuce leaves instead, wash and dry whole leaves and cut off the bottom 1-inch of stem.
