Old-fashioned chocolate chip cookies with golden brown sugar, sugar, solid vegetable shortening, room temperature, unsalted butter, room temperature, large eggs, vanilla extract, all purpose flour, baking soda, salt, 12-ounce package semisweet chocolate chips.

  • 1 cup golden brown sugar
  • 1/2 cup sugar
  • 1/2 cup solid vegetable shortening, room temperature
  • 1/2 cup unsalted butter, room temperature
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 3 cups all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 12-ounce package semisweet chocolate chips

For the Sponge

  • 1 cup plus 1 tbsp. unbleached all-purpose flour
  • 1/4 cup very fine semolina flour
  • 1/2 tsp. coarse-grained salt
  • 1 cup water
  • 1 oz. fresh compressed yeast or 2 packages active dry yeast

For the Dough

  • 2 cups unbleached all-purpose flour plus 1/2 cup for kneading
  • 1/2 cup very fine semolina flour
  • 3/4 cup lukewarm water

Directions

  1. Step 1 Preheat oven to 350°F. Using electric mixer, beat both sugars, shortening and butter in large bowl until light and fluffy.
