Onion and bell pepper strata with fresh tomato salsa with vegetable-oil cooking spray, medium onion, sliced thin, minced garlic, olive oil, large green bell pepper, sliced thin, large yellow bell pepper, sliced thin, very thin slices firm white sandwich bread, cut into 3/4-inch squares  , freshly grated parmesan, large whole eggs, large egg whites, skim milk, packed fresh parsley leaves, washed well, spun dry, and  chopped fine.

  • vegetable oil
  • 1 medium onion, sliced thin
  • 1 1/2 tbsps. minced garlic
  • 1 1/2 tsps. olive oil
  • 1 large green bell pepper, sliced thin
  • 1 large yellow bell pepper, sliced thin

  • 4 large whole eggs
  • 4 large egg whites
  • 2 1/2 cups skim milk
  • 1/2 cup packed fresh parsley leaves, washed well, spun dry, and  chopped fine

For Indian pudding

  • 2 1/2 cups low-fat milk
  • 1/3 cup cornmeal
  • 1/3 cup unsulfured molasses
  • 3/4 tsp. ground ginger
  • 1/4 tsp. cinnamon
  • 1 tbsp. unsalted butter

For dried-fruit compote

For sauce:

  • 1/2 cup fat-free chicken broth
  • 1/4 cup fresh lime juice
  • 2 tbsps. molasses
  • 1 tsp. cornstarch

Directions

  1. Step 1 In a large non-stick skillet cook onion and 1 tablespoon garlic in oil over moderate heat, stirring, until onion is pale golden.

  2. Step 2 Stir in bell peppers and salt and black pepper to taste and cook, covered, over moderately low heat 5 minutes, or until peppers are just tender.

  3. Step 3 Spread half of bread squares evenly in baking dish and top with half of vegetables. Sprinkle 1/4 cup Parmesan evenly over vegetables and top with remaining bread and vegetables.
  4. Step 4 In a bowl whisk together whole eggs, whites, milk, parsley, remaining 1 1/2 teaspoons garlic, and salt and pepper to taste and pour evenly over bread and vegetables.
