Oriental black bean and garlic sauce for asparagus with vegetable oil, minced garlic, grated peeled fresh gingerroot, minced red bell pepper, fermented black beans , rinsed, drained well, and crushed slightly, medium-dry sherry, soy sauce, sugar, chicken broth, cornstarch.

  • 2 tsps. vegetable oil
  • 1 tbsp. minced garlic
  • 1 tbsp. grated peeled fresh gingerroot
  • 1/3 cup minced red bell pepper
  • 2 tbsps. fermented black beans , rinsed, drained well, and crushed slightly
  • 1 1/2 tbsps. medium-dry Sherry
  • 1 tbsp. soy sauce
  • 1/4 tsp. sugar
  • 1 1/2 cups chicken broth
  • 2 tsps. cornstarch

  • 2 tbsps. cornstarch
  • 2 tbsps. unsalted butter
  • 2 pounds Anjou pears , peeled, cored, cut into 3/4-inch pcs.

  • 3/4 cup hazelnuts, toasted, husked
  • 12 vanilla wafer cookies
  • 12 sheets fresh phyllo pastry or frozen, thawed

For cutting and dredging

  • About 1/4 cup confectioners’ sugar, for dusting the cutting board
  • 1/2 cup cornstarch sifted together with 1 cup confectioners’ sugar

Directions

  1. Step 1 In a skillet heat the oil over moderately high heat and in it stir-fry the garlic, the gingerroot, and the red bell pepper until the pepper is softened.
