Perfect pumpkin pie with can pure pumpkin, golden brown sugar, ground cinnamon, ground ginger, freshly grated nutmeg, salt, pinch of ground cloves, large eggs, heavy whipping cream.

Ingredients

  • 1 can pure pumpkin
  • 3/4 cup golden brown sugar
  • 3/4 tsp. ground cinnamon
  • 3/4 tsp. ground ginger
  • 1/4 tsp. freshly grated nutmeg
  • 1/4 tsp. salt
  • Pinch of ground cloves
  • 3 large eggs
  • 1 1/4 cups heavy whipping cream

Candied apple garnish

  • 8 cups unsweetened apple cider or apple juice
  • 1 1/2 lb. Granny Smith apples, peeled, cored, cut into 1/3-inch cubes
  • 3/4 cup golden brown sugar

Gingerbread

  • 1 3/4 cups all purpose flour
  • 1 tbsp. ground ginger
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1/4 tsp. ground cloves
  • 1/4 tsp. finely ground black pepper
  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup golden brown sugar
  • 1 large egg
  • 3/4 cup mild-flavored molasses
  • 1/2 cup boiling water

Chocolate bark:

  • Special equipment: A 9-inch springform pan; a small offset metal spatula

Directions

  1. Step 1 Position rack in bottom third of oven; preheat to 375°F. Spray 9-inch-diameter deep-dish glass pie dish with nonstick spray.
  2. Step 2 Roll out dough on floured surface to 13-inch round. Transfer to prepared dish.
  3. Step 3 Fold edges under and crimp, forming high border. Line crust with foil; fill with dried beans. Bake 15 minutes.
  4. Step 4 Remove foil and beans. Bake until edges are light golden, pressing crust with back of fork if bubbles form, about 7 minutes.
