Pineapple papaya relish with finely diced fresh pineapple, finely diced fresh papaya, finely diced red bell pepper, finely diced maui, vidalia, or other sweet onion, garlic clove, minced, small fresh hot green chili such as a serrano or thai chili, seeded  and minced, shredded mint leaves.

  • 4 black currant tea bags
  • 4 cups water
  • 1/2 cup plus 1 tbsp. chilled simple syrup, or to taste
  • 2 tsps. raspberry vinegar
  • 1 lime, cut into 4 wedges

  • 4 cups peeled jicama, cut into matchstick-size pcs.
  • 3 cups pea sprouts

Directions

  1. Step 1 In a bowl combine all ingredients with salt to taste and let stand at room temperature 1 hour. Relish may be made 1 day ahead and chilled, covered.
