Plantain picadillo pie with cheese with queso fresco,* crumbled, divided, pimiento-stuffed green olives, drained, sliced.



  • 1/2 cup canola or vegetable oil
  • 4 large semi-ripe plantains, peeled, cut on diagonal into 2- to 3-inch-long by 1/2-inch-thick ovals.


For salad

  • 8 oz very thin bean-thread noodles
  • 3/4 lb Chinese long beans or green beans, trimmed and cut into 3-inch pcs.
  • 1 seedless cucumber , halved lengthwise and sliced diagonally 1/8 inch thick
  • 1 bunch scallions, cut into matchsticks
  • 1 firm-ripe mango, peeled, pitted, and thinly sliced
  • 2 thin carrots, cut into 1/8-inch-thick matchsticks
  • 1/2 cup loosely packed fresh cilantro leaves
  • 1/2 cup loosely packed fresh mint leaves
  • 1/2 cup loosely packed fresh small basil leaves

For crust:

  1. Step 1 Heat oil in heavy large nonstick skillet over medium heat. Working in batches, add plantain slices and cook until golden brown, about 3 minutes per side.

For filling:

  1. Step 4 Heat reserved 2 tablespoons oil in large nonstick skillet over medium-high heat. Add onion and garlic and sauté until onion is translucent, about 4 minutes.

  3. Step 6 Add tomato paste, raisins, green olives, oregano, cinnamon, cumin, and allspice and simmer until most liquid evaporates and filling is thick, stirring occasionally, about 10 minutes.
