Plum Küchen Recipe

Plum küchen with frozen vanilla yogurt.

Ingredients

  • Frozen vanilla yogurt

For caponata

For cups

  • 1/2 tsp. anise seeds
  • a 16- to 18-inch round of very thin, pliable lavash
  • 1/2 tsp. coarse salt

For sauce:

  • 1/2 cup fat-free chicken broth
  • 1/4 cup fresh lime juice
  • 2 tbsps. molasses
  • 1 tsp. cornstarch

Directions

  1. Step 1 Position rack in center of oven and preheat to 350°F. Spray 13x9x2-inch baking pan with vegetable oil spray.
  2. Step 2 Unroll dough on work surface. Sprinkle half of dough with 2 tablespoons sugar. Fold other half of dough over.

  3. Step 3 Stir 1/2 cup sugar, cornstarch and cinnamon in large bowl until cornstarch is free of lumps. Add plums and egg white and toss to combine evenly.

  4. Step 4 Let stand 5 minutes. Arrange plum wedges in rows on crust. Pour sugar mixture from bowl over plums.

Ingredients

  • 5 large plums, halved, pitted, each cut into 8 wedges

For cake

  • 2 1/4 cups all purpose flour
  • 1 1/2 tsps. baking soda
  • 1/4 tsp. salt
  • 2 cups sugar
  • 1 cup unsalted butter, room temperature
  • 4 large eggs, separated
  • 2 tsps. vanilla extract
  • 1 cup buttermilk
  • 1 cup semisweet chocolate chips

For frosting

For glaze

  • Special equipment: 3 round cake pans

For frico caldo

  • 2 medium Yukon Gold potatoes, peeled and cut into quarters
  • 1 tbsp. unsalted butter
  • 1/2 medium onion, finely chopped
  • 2 cups finely grated Parmigiano-Reggiano
  • 1 tbsp. kosher salt
  • 1/2 tsp. nutmeg, freshly grated
  • 1 tbsp. olive oil

To serve

  • 2 large heads romaine , torn into bite-sized pcs.
  • 16 thin slices prosciutto

Directions

  1. Step 1 Preheat oven to 350°F. Butter 13 x 9 x 2-inch baking pan. Sift flour, baking powder, 1 teaspoon cinnamon and salt into small bowl.
