Porcini and bacon sauce with sliced bacon, chopped, garlic cloves, sliced, shallots, thinly sliced, button mushrooms, sliced, dry red wine, low-salt chicken broth, beef broth, large fresh rosemary sprig, reserved roasting pan with juices, chilled butter, diced.


  • 1/4 lb. sliced bacon, chopped
  • 9 garlic cloves, sliced
  • 2 shallots, thinly sliced
  • 1 lb. button mushrooms, sliced
  • 3 cups dry red wine
  • 4 cups low-salt chicken broth
  • 1 cup beef broth
  • 1 large fresh rosemary sprig
  • Reserved roasting pan with juices
  • 1/4 cup chilled butter, diced

For tomato sauce:

For beef braciole:

  • 4 garlic cloves, minced
  • 1/2 cup finely chopped flat-leaf parsley
  • 1 cup grated Pecorino Romano
  • 3 oz. thinly sliced pancetta, finely chopped
  • 1 1/2 lb. beef top round, cut across the grain into 1/4-inch slices

For meatballs and other meats:

For the flavoring

  • 2 1/2 tsps. rosewater
  • 2 cups shelled roasted unsalted pistachios
  • 2 or 3 drops red food coloring

For cutting and dredging

  • About 1/4 cup confectioners’ sugar, for dusting the cutting board
  • 1/2 cup cornstarch sifted together with 1 cup confectioners’ sugar

For final assembly and decoration

  • Assorted nonpoisonous flowers

Berry compote


  1. Step 1 Place porcini mushrooms in small bowl; add 2 cups boiling water. Let soak until mushrooms soften, at least 30 minutes and up to 2 hours.

  2. Step 2 Sauté bacon in large saucepan over medium heat until golden. Add garlic and shallots; sauté 3 minutes.

  3. Step 3 Add drained porcini and wine to pan. Boil 15 minutes. Mix in all broth. Add porcini liquid, leaving sediment behind.

  4. Step 4 Return mixture to boil, reduce heat, and simmer until mixture is reduced to 5 cups, about 1 hour 30 minutes.
  5. Step 5 Place reserved roasting pan over 2 burners. Add mushroom-wine mixture and bring to boil, scraping up browned bits.

  6. Step 6 Strain back into same saucepan, pressing out all liquid. Simmer over medium heat until reduced to 2 cups, about 5 minutes.
