  • 1 lb. sliced bacon
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 4 to 5 cups water
  • 1 6-ounce can tomato paste
  • 1 lb. Portuguese chouri‧o or Spanish chorizo , cut into 1/4-inch-thick slices
  • 1/2 tsp. dried hot red pepper flakes, or to taste

Directions

  1. Step 1 Cook bacon in a 4- to 6-quart heavy pot until crisp. Transfer to paper towels to drain. Spoon off (and discard) all but about 3 tablespoons fat in pot.
