Ramos Gin Fizz Recipe

Ramos gin fizz with cut lemon, superfine sugar, gin, egg white, cream, orange-flower water, lemon juice, lime juice, crushed ice, club soda.

  • 2/3 cup half-and-half
  • Seeds scraped from 1 vanilla bean , or 1 tbsp. pure vanilla extract
  • 2 large egg yolks

For assembly

  • large pastry bag
  • 1/2-inch plain tip
  • 1/4-inch plain tip
  • Note: a cake decorating turntable is helpful for assembling a croquembouche

For mango ravioli

To cook fish and assemble dish

Espresso chocolate chunk:

  • 1/2 cup coarsely chopped semisweet chocolate
  • 2 tsp. espresso powder

Directions

  1. Step 1 Rub the rim of a highball glass with lemon and dip into sugar to frost. Combine all ingredients except the soda in a cocktail shaker and shake steadily until the mixture is thick and frothy.

  • 1 1/2 oz. gin
  • 1 tablespoonsimple syrup
  • 2 oz. half-and-half
  • 1 egg white
  • 1/8 tsp. vanilla extract
  • 1/2 oz. orange flower water
  • 1 oz. lemon-lime soda
  • Orange wedge, for garnish

Garnish:

  • lemon slices; mint sprigs

Filling:

  • 2/3 cup fresh lime juice
  • 2/3 cup sugar
  • 3 tbsps. finely grated lime peel
  • 1/4 tsp. finely crushed cardamom seeds
  • 2 quarts premium vanilla ice cream, slightly softened
  • 3 pints assorted berry sorbets

  • 1 1/2 tsps. dry yeast
  • 2 cups unbleached all purpose flour
  • 1 cup unsalted butter, room temperature , cut into 12 pcs.
  • 6 tbsps. sugar

  • 3 tbsps. lukewarm whole milk
  • 2 tsps. vanilla extract
  • 1 1/2 tsps. fine sea salt
  • 1 1/2 cups chopped candied orange peel*

  • 1/2 cup all purpose flour
  • 2 dove-shaped paper baking molds

Step 6 (Glaze and baking)

  • 7 cups 3/4-inch cubes crustless brioche or egg bread
  • 6 large eggs
  • 3/4 cup sugar
  • 1/8 teaspoon plus 1/4 tsp. salt
  • 1 1/2 cups heavy whipping cream
  • 1 1/2 cups half and half
  • 1 tsp. vanilla extract
  • 1/4 cup dark brown sugar
  • 3 tbsps. unsalted butter
  • 2 tbsps. dark rum
  • 1 tbsp. fresh lemon juice
  • 4 medium just-ripe bananas, peeled, cut lengthwise in half, then crosswise into 1/3-inch pcs.

Equipment:
