Rice salad with long-grain white rice, garlic clove, finely chopped, olive oil, ground cumin, 1/2 seedless cucumber, chopped cilantro, fresh lemon juice. To make this rice salad for 2 persons you will need 15 min for preaparation and 30 min for baking.

Ingredients

  • 1/2 cup long-grain white rice
  • 1 garlic clove, finely chopped
  • 2 tbsps. olive oil
  • 1/4 tsp. ground cumin
  • 1/2 seedless cucumber
  • 1 1/2 tbsps. chopped cilantro
  • 1 tsp. fresh lemon juice

For chicken:

  • 1 chicken , halved lengthwise
  • 2 tbsps. thin matchsticks of peeled ginger

For sauce:

  • an adjustable-blade slicer

Accompaniments:

  • lime wedges; thinly sliced fresh red chiles

For grilled mushrooms and chicken:

  • 3/4 lb. fresh cremini mushrooms, halved
  • 3/4 lb. fresh shiitake mushrooms, stems reserved for another use and caps halved
  • 2 lb. skinless boneless chicken thighs
  • 1/3 cup basil pesto

Fresh tomato salad:

  • 2 medium tomatoes, cut into 1/2-inch-thick wedges
  • 1/4 cup thinly sliced basil

For lettuce:

  • Equipment: a perforated grill sheet

Directions

  1. Step 1 Cook rice in a medium saucepan of boiling salted water (1 teaspoon salt for 3 quarts water), uncovered, until tender, about 20 minutes.
