Rosemary chicken and summer squash brochettes with metal skewers.

  • 3 quarts cold water
  • 5 tbsps. olive oil
  • 4 whole garlic cloves, peeled
  • 1 large bunch fresh sage leaves
  • 16 whole black peppercorns
  • 1 tbsp. salt

  • 1 1/2 cups sugar
  • 1/2 tsp. coarse salt
  • 6 ripe bananas, peeled, thinly sliced
  • Fresh mint sprigs

Spicy Sabayon Sauce

  • 4 large egg yolks
  • 3/4 cup dry white wine
  • 2 tbsps. sugar
  • 1/8 tsp. chile powder

Directions

  1. Step 1 Prepare barbecue (medium-high heat). Whisk first 5 ingredients in medium bowl. Add chicken and squash; toss.
