Salsa Mexicana Recipe

Salsa mexicana with roma tomatoes, diced, fresh serrano chiles with seeds, diced, 1/2 medium onion, diced, 1/2 bunch fresh cilantro leaves and stems, coarsely chopped, freshly squeezed lime juice, extra-virgin olive oil, kosher salt.

Ingredients

  • 3 Roma tomatoes, diced
  • 2 fresh serrano chiles with seeds, diced
  • 1/2 medium onion, diced
  • 1/2 bunch fresh cilantro leaves and stems, coarsely chopped
  • 1 tbsp. freshly squeezed lime juice
  • 1/2 tbsp. extra-virgin olive oil
  • Kosher salt

Sauce:

Summer rolls:

  • 3 oz. dried rice-stick noodles
  • 2 tbsps. fresh lime juice, divided
  • 1 1/2 tsps. sugar
  • 2 3/4 cups coarsely grated carrot
  • 3 tbsps. finely chopped serrano or jalapeño chiles, including seeds
  • 12 rice-paper rounds, plus more in case some tear
  • 4 cups thinly sliced napa cabbage, coarsely chopped
  • 1 cup finely chopped cocktail peanuts
  • 1 cup fresh mint leaves
  • 1 cup fresh basil leaves

Directions

  1. Step 1 In a small bowl, combine the tomatoes, chiles, onion, cilantro, lime juice, and olive oil. Toss to combine, season to taste with salt, and serve.

Salsa mexicana with tomatoes , cut into 1/4-inch cubes, medium white onion , cut into 1/4-inch cubes, to 8 serrano or jalapeño chiles, chopped, chopped fresh cilantro, fresh lime juice, coarse kosher salt.

Ingredients

  • 12 oz. tomatoes , cut into 1/4-inch cubes
  • 1 medium white onion , cut into 1/4-inch cubes
  • 2 to 8 serrano or jalapeño chiles, chopped
  • 1/4 cup chopped fresh cilantro
  • 3 tbsps. fresh lime juice
  • Coarse kosher salt

For beef:

  • 3 lb. skirt steak
  • 1 white onion, quartered
  • 3 garlic cloves
  • 2 Turkish bay leaves or 1 California
  • 1/4 tsp. black peppercorns
  • 3 whole allspice
  • 1 whole clove

For sauce:

  • Equipment: an electric coffee/spice grinder
  • Accompaniments: hot corn tortillas or rice; cooked black beans ; chopped white onion; lime wedges

Even easier:

  • Soften about 6 cups of purchased chocolate ice cream. Mix in 1/2 tsp. cinnamon. Spoon the ice cream over the baked brownie layer, freeze, and continue with the recipe.

  1. Step 1 Combine first 5 ingredients in medium bowl. Season to taste with coarse salt. DO AHEAD: Can be made 2 hours ahead.
