Sauteed chick-peas with cinnamon and fresh coriander with a 19-ounce can chick-peas, rinsed and drained, olive oil, cinnamon sticks, halved, fresh lemon juice, or to taste, fresh coriander.

  • 2 cinnamon sticks, halved

  • 1/4 cup packed dark brown sugar

  • 3/4 cup shredded sweetened coconut
  • 2/3 cup sliced almonds

Fruit

  • 3 1/2 lb. pears, peeled, cored, cut into 1/2-inch-thick wedges
  • 1 1/3 cups dried tart cherries or raisins
  • 2/3 cup packed dark brown sugar
  • 2 tbsps. all purpose flour

Directions

  1. Step 1 In a deep 12-inch heavy skillet (preferably non-stick) heat 3 tablespoons oil with cinnamon sticks over moderately high heat until cinnamon is fragrant and sauté chick-peas, shaking skillet, until browned and crisp, about 10 minutes.
